How to make it

  • Preheat oven to 350 degrees.
  • Grease and flour a 10" tube pan.
  • Sift together flour,baking powder,soda,salt,cinnamon,and nutmeg. Set aside.
  • In a large mixing bowl,cream butter and sugar until light and fluffy.
  • Add mashed sweet potatoes and vanilla. Beat until well blended.
  • Add eggs one at a time.
  • Add flour mixture to potato mixture. Beat on low until combined.
  • Pour batter into prepared pan. Bake for 1 hour and 20 minutes or until inserted toothpick comes out clean.
  • Cool 20 minutes in pan then turn out onto serving plate.
  • Sauce:
  • Combine caramel sauce,heavy cream,and rum in a medium microwave safe bowl.
  • Heat on high for 45 seconds.
  • Whisk and serve on top of each slice of cake.
  • Cake and sauce can be served warm.

    Do I have to put the sauce on the cake? Can't I just eat it out of the bowl? And then there is the cake. To me it sounds like a breakfast. lunch or dinner side dish. Thank you for this recipe. Yum!!!

    WoW! I saw this out of the corner of my eye when I was stopping by to thank you for your comment and now I am going to have to make this in the morning. I have a pie to make too so my family will be on sugar overload BUT OH SO WORTH IT! Yay! =D
