Although distinctly non-vegetarian, we tried this two days running and on the second day we used thin ham slices in place of the cheese. This also works extremely well and compliments the vegetables very nicely.

Delicious, tasty and easy - and versatile. I did it with the cheese, then - a slice of tomato, then went with bean sprouts. I think crispy bacon would work well, too. All wonderful and fresh and very pleasing. Great post again, Deb - thanks so much! *hugs* Vickie (I wish I had one right now!)
