Super tasty! I used less onion, about 1/4 cup of diced sweet onion which was a 1/3 of a med-large onion. And only an 1/8th tsp of cayenne pepper and 1 small garlic clove; which was plenty oniony, spicy and garlicky enough for me. You probably wouldn't miss the cheese in this if you left it out, but like others below I would love to try it with crispy bacon, sprouts, tomato or crunchy lettuce.

Delicious, tasty and easy - and versatile. I did it with the cheese, then - a slice of tomato, then went with bean sprouts. I think crispy bacon would work well, too. All wonderful and fresh and very pleasing. Great post again, Deb - thanks so much! *hugs* Vickie (I wish I had one right now!)
