This is a great weeknight meal using leftover ham

Ingredients
  • 2 tbls. butter
  • 1 small onion, chopped
  • 2 tbls. flour
  • salt and pepper to taste
  • 1 cup milk
  • 1/2 cup cream
  • 1/2 cup swiss cheese, grated
  • 1 tbls. parmesan cheese, grated
  • 2 cups ham, cut into cubes
  • 1 1/2 cups asparagus, frozen or leftover cooked

Directions
  1. In skillet, melt butter and saute onion until tender
  2. Stir in flour and salt and pepper until blended
  3. Add milk and cream stirring constantly until mixture thickens and comes to a boil
  4. Lower heat and stir for one minute or so
  5. With heat on low, add cheeses and stir until melted.
  6. Add ham and asparagus and heat through
  7. Serve on toast or biscuits.
