Found this in a Woman's Day magazine. Since I like to share my WD with a sis, I wanted to get this recorded somewhere. This seems like a homemade HH I'm sure my kids will love.

Ingredients
  • 1 lb meat loaf mix (I imagine you could use ground beef, turkey or whatever)
  • 8 curly lasagna noodles, broken into 2-in. pieces
  • 1 jar (26 oz) marinara sauce
  • 2 cups water
  • 1 cup shredded Italian cheese blend
  • 3/4 cup part-skim ricotta (optional)

Directions
  1. Cook meat loaf mix in a large nonstick skillet over medium-high heat, stirring often to break up meat, 4 to 5 minutes, or until browned. Drain off fat. Stir in noodles, sauce and water; bring to a boil. Cover; reduce heat and simmer, stirring often, 18 minutes or until noodles are tender.
  2. Remove from heat; stir in 1/2 cup shredded cheese. Spoon ricotta on top; add remaining shredded cheese. Cover 3 minutes to melt cheese.

Sounds very good. Lasagna was on the menu this next week. Will try. Thanks!

O.K. I went to make this tonite and realized I had forgotten to get ricotta at the grocery store. I made it anyway. Very good without it also... :)

I make this... fast and good...

I really like the idea of using meatloaf. That's a Great idea! My butcher makes his own meatloaf that is incredible. I'm going to use that in this recipe....Thanks!

Something easy that turns out good. Thank you.
