Mimis Chicken Salad Recipe
An elegant way to serve Chicken Salad. Easy to make. Truly one of my favorites. It is so good. This site has the recipe for Durkee's Dressing if you can't find it at your supermarket. From The Cottage Restaurant Recipe book.

Ingredients
  • Salad:
  • 2 C cooked, diced Chicken (I use Organic Chicken for this recipe. Tastes so much better.)
  • 1 C Seedless Red Grapes, cut in half (make sure they are fresh and crunchy!)
  • 1/2 C diced Celery
  • Dressing:
  • 1/2 C Mayonnaise
  • 1 T Durkee's Dressing
  • 1 t White Vinegar
  • 1 t Sugar
  • For garnish:
  • Toasted Slivered Almonds

Directions
  1. Combine Chicken, Grapes and Celery.
  2. In a seperate bowl mix Mayonnaise, Durkee's Dressing, Vinegar and Sugar. (Adjust to taste. I always add a little extra of everything.)
  3. Add dressing to Chicken mixture until you get the consistency you want.
  4. Garnish with toasted, Slivered Almonds. (Adds a difference in taste and presentation.)

My mom always made this. Thanks for sharing, it's one I didn't get written down before she died. I'll be making this. Might I ask though, do you mean Durkee's Seasoning? I'm not sure what Durkee's Dressing is. Thanks again.
