Rainbow Maple - Ginger Mini Loaf

- 1/3 cup whole wheat flour shopping list
- 3 tbsp oats shopping list
- 1/4 tsp baking soda shopping list
- 1/2 tsp baking powder shopping list
- 1/2 small zucchini, shredded shopping list
- 1/4 large carrot, shredded shopping list
- 1 tsp fresh ginger, grated shopping list
- 3 tbsp maple syrup shopping list
- 3 tbsp low-fat sour cream shopping list
- 1/2 tsp apple cider vinegar shopping list
How to make it
- Preheat the oven to 375F. Grease a mini-loaf pan.
- Whisk together dry ingredients in a small bowl.
- Whisk together wet ingredients, including grated vegetables and ginger.
- Fold into the dry ingredients. Do not over mix.
- Bake 25 minutes, turn out immediately and cool on wire rack.
