GARLICKY BRAISED KALE WITH SUN DRIED TOMATOES Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ford Estate in Lancaster, Texas in 1987.

Ingredients
  • 2 tablespoons extra virgin olive oil
  • 5 cloves garlic cut in half then smashed and peeled
  • 2 tablespoons finely chopped oil packed sun-dried tomatoes well drained
  • 1/2 large bunch kale washed and cut into 1” ribbons
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 cup chicken stock
  • 1/2 teaspoon balsamic vinegar
  • 1/2 ounce crumbled goat cheese

Directions
  1. Heat the olive oil in a soup pot over medium heat.
  2. Add garlic and sauté stirring for 3 minutes.
  3. Add tomatoes and stir to combine.
  4. Add kale tossing to coat well with the oil.
  5. Season with salt and pepper then continue stirring until kale is wilted.
  6. Add stock then bring to a boil and reduce to a simmer.
  7. Cover and cook until kale has softened about 8 minutes.
  8. Uncover then turn heat to high and boil away the remaining liquid stirring frequently.
  9. Take pan off heat then season with vinegar and stir to combine.
  10. Transfer to a small serving dish and top with crumbled goat cheese.
