Colourful Veggies With Serious Kick Recipe
A hearty, delicious vegan soup delivers the perfect amount of zip and herby flavour with a punch of protein from the lentils and colour from carrots and tomatoes.

Ingredients
  • 4 cups vegetable broth
  • 2 cups canned diced tomatoes
  • ½ cup chopped onions
  • ½ cup diced carrots
  • ½ cup sliced celery
  • 2 cups shredded green cabbage
  • 1 tablespoon lemon juice
  • ½ teaspoon oregano
  • 1 bay leaf
  • Pinch black pepper
  • 1 ½ cups cooked lentils
  • ¼ - ½ tsp Tabasco

Directions
  1. Bring all ingredients except lentils and Tabasco to a boil.
  2. Cover, lower heat to simmer 20 minutes.
  3. Add lentils and Tabasco, stir and re-cover.
  4. Cook 30 minutes, remove bay leaf, and serve
