Pani Zofias Panga Delight Recipe
This is a classic Polish dish, but I dont know what the English name of the fish they use is. Any neutral flavoured meaty white fish is good.If you get it right- it will impress you!

Ingredients
  • 1 large fillet of Panga or equivalent white meaty fish -eg COD
  • 3 large carrots grated
  • 1 large parsnip grated
  • 1 large onion chopped finely
  • garlic chopped finely optional
  • 1 decent chunk of celeriac-grated
  • teaspoon palm sugar
  • salt n pepper

Directions
  1. Bake the fish in foil for 10/15 mins -dont overdo it and let cool
  2. grate all the ingrediant
  3. In a large pan, just cover the surface with veg/olive oil and heat up
  4. brown the onions and garlic for 5 mins
  5. then add the rest of the vegetables keeping the heat high and stirring occasionally for ten mins or so.
  6. Careful not to burn anything at this stage, when everything is coated-add the sugar , salt and pepper and lower the heat and put a lid on the pan if possible and mix once in a while
  7. Now for the next 20/25 mins let the mixture caramelise, Be patient here -its worth it. When it looks and smells good, remove it , add a tbl spn of oil to add extra moisture if too dry
  8. Chop the baked fish on a plate and then cover completely with this mixture. Allow to cool and serve cold on a warm summer day with a bit of salad.
