How to make it

  • Bake the fish in foil for 10/15 mins -dont overdo it and let cool
  • grate all the ingrediant
  • In a large pan, just cover the surface with veg/olive oil and heat up
  • brown the onions and garlic for 5 mins
  • then add the rest of the vegetables keeping the heat high and stirring occasionally for ten mins or so.
  • Careful not to burn anything at this stage, when everything is coated-add the sugar , salt and pepper and lower the heat and put a lid on the pan if possible and mix once in a while
  • Now for the next 20/25 mins let the mixture caramelise, Be patient here -its worth it. When it looks and smells good, remove it , add a tbl spn of oil to add extra moisture if too dry
  • Chop the baked fish on a plate and then cover completely with this mixture. Allow to cool and serve cold on a warm summer day with a bit of salad.
