Hasselback Potatoes Le Cordon Bleu Home Collection

- 6 evenly sized potatoes shopping list
- 2 Tbl unsalted butter shopping list
- 1 Tbl plain bread crumbs shopping list
- 2 Tbl grated cheddar or Parmesan shopping list
How to make it
- Preheat oven to 425
- Oil a roasting pan and set aside
- Peel the potatoes to approximately the same size
- Cut off very thin slice from bottom of potato so it will not roll
- Slice into hasselbacks by placing the handle of a wooden spoon next to the potato and making thin cuts in potatoes to resemble a fan.
- The spoon handle will prevent cutting through the bottom of the potato
- Place potatoes sliced side up in the prepared pan
- Sprinkle with salt and pepper, dot with butter, then bake for 30 minutes
- Remove from oven and baste with the melted butter
- Sprinkle with the bread crumbs and cheese
- Bake another 15 to 30 minutes or until potatoes are tender to the point of a sharp knife.
- The flavor may be enhanched by sprinkling some chopped fresh or dried rosemary or thyme into the bread and cheese topping
