How to make it

  • Preheat oven to 425
  • Oil a roasting pan and set aside
  • Peel the potatoes to approximately the same size
  • Cut off very thin slice from bottom of potato so it will not roll
  • Slice into hasselbacks by placing the handle of a wooden spoon next to the potato and making thin cuts in potatoes to resemble a fan.
  • The spoon handle will prevent cutting through the bottom of the potato
  • Place potatoes sliced side up in the prepared pan
  • Sprinkle with salt and pepper, dot with butter, then bake for 30 minutes
  • Remove from oven and baste with the melted butter
  • Sprinkle with the bread crumbs and cheese
  • Bake another 15 to 30 minutes or until potatoes are tender to the point of a sharp knife.
  • The flavor may be enhanched by sprinkling some chopped fresh or dried rosemary or thyme into the bread and cheese topping
