Siberian Sashlik Recipe
SIBERIAN SHASHLIK This recipe came from an estate sale. I obtained it when I purchased the family collection from the Buckley Estate in Garland, Texas in 1994.

Ingredients
  • 2 pounds top sirloin steak cut in 2" pieces
  • 1 cup red wine
  • 1 cup vegetable oil
  • 2 tablespoons vinegar
  • 2 pickled green tomatoes quartered
  • 1 large onion coarsely chopped
  • 4 large garlic cloves minced
  • 3 small dried hot red chiles coarsely crumbled
  • 4 whole cloves
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 medium onions quartered
  • 4 medium firm red tomatoes halved
  • 4 pickled green tomatoes quartered

Directions
  1. Combine wine, oil, vinegar, green tomatoes, onion, garlic, chilies, cloves, salt and pepper.
  2. Add meat and stir well to mix then cover and refrigerate several hours turning occasionally.
  3. Remove meat from marinade then discard marinade.
  4. Thread meat onto skewers alternating with pieces of onion, tomatoes and green tomatoes.
  5. Grill over hot colas 15 minutes turning skewers occasionally.
  6. Serve immediately.
