Vegetable Chickpea Curry

- 1 Tbsp olive oil shopping list
- 2 cups cubed sweet potato, turnips, or squash shopping list
- 1 cup chopped green beans shopping list
- 1 chopped onion shopping list
- 2 chopped tomatoes shopping list
- 1 chopped zucchini shopping list
- 2 cloved garlic, minced shopping list
- 1 vegetable boullion cube shopping list
- 2 cups water shopping list
- 1 small can tomato paste shopping list
- 1 can chickpeas, drained shopping list
- salt and pepper to taste shopping list
- 1/2 teaspoon each: cumin, curry powder, coriander, cinnamon shopping list
How to make it
- Heat oil in skillet
- Add vegetables and stir fry for 3 minutes
- Add boullion, water, garlic, and chickpeas.
- Simmer for 15 minutes
- Add tomato paste and spices.
- Simmer for 20 minutes or until all vegetables are cooked through.
