Vegetable Chickpea Curry Recipe

Ingredients
  • 1 Tbsp olive oil
  • 2 cups cubed sweet potato, turnips, or squash
  • 1 cup chopped green beans
  • 1 chopped onion
  • 2 chopped tomatoes
  • 1 chopped zucchini
  • 2 cloved garlic, minced
  • 1 vegetable boullion cube
  • 2 cups water
  • 1 small can tomato paste
  • 1 can chickpeas, drained
  • salt and pepper to taste
  • 1/2 teaspoon each: cumin, curry powder, coriander, cinnamon

Directions
  1. Heat oil in skillet
  2. Add vegetables and stir fry for 3 minutes
  3. Add boullion, water, garlic, and chickpeas.
  4. Simmer for 15 minutes
  5. Add tomato paste and spices.
  6. Simmer for 20 minutes or until all vegetables are cooked through.
