How to make it

  • Heat 3/4 c oil in large deep sauce pan over med heat. Wehn hot, add sliced onions and cook, stirring till they soften. Add cinnamon, ginger and lentils to the pan and cook, stirring often, for about 10 min. Add stock, 3 cups of water, salt and red pepper. Bring to a boil, reduce heat and simmer for about 10 min.
  • Squeeze juice from lemon, discarding seeds and add to the dal and cook for about 50 min longer, stirring often.
  • Heat remaining 1/2 cup of oil in small pan, Add chopped onion, garlic and bay leaves. Cook stirring untill onion is browned - about 5 min. Add this mixture, including oil, to the lentils, remove bay leave, sprinkle with chopped cilantro and serve.
