Ingredients
  • 12 Oz. uncooked fettuccini
  • 1 Tbl EVOO
  • 1/2 Cup chopped onion
  • 1 1/2 Lbs boneless skinless chicken breast halves, cut into 1" pieces
  • 1 small green bell pepper, cut into bite sized strips
  • 2 garlic cloves, minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3 small zucchini halved lengthwise and sliced
  • 3 Lrg tomatoes, seeded and chopped
  • 3 Tbl fresh basil, chopped or approx. 1/2 that amount dried
  • 2 Tbl chopped fresh oregano or 1 Tbl dried
  • 1/2 c shredded fresh Parmesan

Directions
  1. Cook fettuccine, drain and cover; keep warm
  2. Heat oil in 12" non-stick skillet over medium high until hot.
  3. Add onion' cook 2 to 3 minutes or until tender, stirring occasionally
  4. Add chicken, bell pepper, garlic, salt and pepper; mix well
  5. Cook 5 to 6 minutes or until chicken is golden and no linger pink in center, stirring occasionally
  6. Add zucchini, tomatoes and oregano; cook 5 to 6 minutes or until zucchini is tender, stirring occasionally
  7. Place cooked fettuccine on a serving platter; spoon chicken and vegetable mixutre over top
  8. Sprinkle with cheese and serve with additional cheese, if desired
