Fettuccini With Chicken And Vegetables

- 12 Oz. uncooked fettuccini shopping list
- 1 Tbl EVOO shopping list
- 1/2 Cup chopped onion shopping list
- 1 1/2 Lbs boneless skinless chicken breast halves, cut into 1" pieces shopping list
- 1 small green bell pepper, cut into bite sized strips shopping list
- 2 garlic cloves, minced shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 3 small zucchini halved lengthwise and sliced shopping list
- 3 Lrg tomatoes, seeded and chopped shopping list
- 3 Tbl fresh basil, chopped or approx. 1/2 that amount dried shopping list
- 2 Tbl chopped fresh oregano or 1 Tbl dried shopping list
- 1/2 c shredded fresh Parmesan shopping list
How to make it
- Cook fettuccine, drain and cover; keep warm
- Heat oil in 12" non-stick skillet over medium high until hot.
- Add onion' cook 2 to 3 minutes or until tender, stirring occasionally
- Add chicken, bell pepper, garlic, salt and pepper; mix well
- Cook 5 to 6 minutes or until chicken is golden and no linger pink in center, stirring occasionally
- Add zucchini, tomatoes and oregano; cook 5 to 6 minutes or until zucchini is tender, stirring occasionally
- Place cooked fettuccine on a serving platter; spoon chicken and vegetable mixutre over top
- Sprinkle with cheese and serve with additional cheese, if desired
