Ingredients
  • 2 -3 ripe hothouse tomatoes, diced
  • 1/2 cup diced onion, a mild yellow variety or red for more bite
  • 1/2 cup chopped fresh cilantro
  • 2 tbsp- 1/4 cup red wine vinegar
  • 1 tsp cumin
  • 2 tsp Adobo seasoning
  • 1/2 tsp fresh ground pepper
  • 1/8 tsp (mild) 1/4 (medium) or more (hot) crushed red pepper flakes

Directions
  1. Prep time includes chilling time
  2. Wash and chop veggies and cilantro
  3. mix with vinegar and spices
  4. chill for at least 1 hour
  5. enjoy!
