Mahi Mahi With Mango Lime Butter Sauce

- 3 tbsp unsalted butter shopping list
- 1 tsp cornstarch shopping list
- 1/8 tsp red pepper flakes shopping list
- 1 ea Ripe mango, peeled and diced shopping list
- 2 tbsp Granulated sugar shopping list
- 1/4 cup dry sherry (or mango nectar for alcohol-free version) shopping list
- 2 tbsp Fresh lime juice (1 Lime) shopping list
- 1 tsp Finely Grated Fresh lime zest **optional** shopping list
- ******** shopping list
- 4 ea mahi mahi fillets shopping list
- 2-3 tbsp unsalted butter, melted shopping list
How to make it
- Melt butter in small saucepan over medium low heat; blend in cornstarch and red pepper. Add mango, sugar, and sherry (or mango nectar) and bring just to a boil.
- Reduce heat and simmer 5 minutes or until fruit is soft and the sauce has thickened.
- Stir in lime juice and zest and cook an additional 1 or 2 minutes.
- Rinse the fish and pat dry. Brush fish with melted butter.
- Place fish skin side down over meduim heat or under a broiler for about 5 minutes.
- Turn and baste the top with more melted butter; cook an additional 5 minutes or until fish flakes easily with a fork.
- Transfer fish fillets to a plate and spoon warm sauce over fish and serve.
