Ingredients

How to make it

  • place cut up wings(include tips)in a large stock pot with broth,onion,celery,garlic,sage,thyme and bay leaf
  • add water to just cover
  • cover and bring to a boil,over high heat
  • lower heat to medium low and simmer for 15 minutes
  • remove cover and let cool for atleast 10 minutes.
  • while wings are cooking,make sauce
  • heat a heavy saucepan over medium high heat.add butter and onion
  • reduce heat to medium and cook onions until soft and trenslucent
  • add garlic and chiles,stir fry for 2 minutes
  • deglaze with vineegar,scraping up all browned bits
  • add jam and salt to taste,stir until smoth
  • let cool until wings are cooked
  • strain wings(discard tips)retain strained stock for anouther use.
  • toss wings with sauce and serve

    I see what you mean, Robert. I read the recipe too quickly. Missed the first part about poaching. I just presumed grill cuz that's what I do all the time with wings.
