Herb And Garlic Chicken And Vegetables Recipe

Ingredients
  • 1 cut-up whole chicken (3 - 3 1/2 lbs)
  • 2 Tbl EVOO
  • 1 envelope Savory Herb with Garlic soup mix (Knorr/Lipton)
  • 1/3 Cup chicken broth
  • 4 medium celery stalks, cut is half lengthwise then into 4 inch pieces
  • 1 large onion, cut in 6 wedges
  • 2 Large carrots, cut in half lengthwise , then in 4 inch pieces
  • 2 medium unpeeled russet potatoes, cut into 8 pieces or 4 larg red potatoes, cut into 4 pieces

Directions
  1. Heat oven to 425
  2. Remove skin from chicken, if desired
  3. In a small bowl mix oil, soup mix and broth
  4. Brush both sides of chicken pieces with about 1/2 the oil mixture
  5. In a large bowl mix vegetables and remaining oil mixure
  6. Arrange vegetables in an ungreased baking pan
  7. Bake for 15 minutes
  8. Place chicken pieces in pan, overlapping vegetables as necessary
  9. Bake 35-40 minutes longer or until vegetables are tender and juices of chicken run clear when pierced at thickest piece

What is EVOO? This recipe sounds really good.


Delicious! Reminds me of a dish I grew up with, but the soup mix adds so much more without any fuss. (Knorr has never steered me wrong)
