Shredded Pie - Grandmas Way Recipe

My grandma was baking this almost every weekend. It's a very simple pie that pleases time and time again. Great for larger crowds and impossible to ruin.

  • 3 egg yolks
  • 1/2 lbs (2 sticks) of butter or margarine
  • 3/4 cup sugar
  • 3-1/2 to 4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tbsp white vinegar
  • pinch of salt
  • -
  • Filling:
  • thick fruit preserves, lemon curd, apple or plum butter, any berry jam
  • 3/4 cup chopped walnuts
  • 1/2 lemon - zest and juice
  • vanilla, cloves, nutmeg

Directions
  1. Cream together egg yolks, butter, sugar, salt until smooth
  2. Combine soda and vinegar in a tablespoon to form a foaming liquid
  3. Pour the liquid into the bowl, mix well.
  4. Add flour in batches, constantly stirring to form very thick dough.
  5. Chill 1/3 of the dough in the fridge, covered with plastic film
  6. -
  7. Roll the remaining dough out into a 1/2 to 3/4 inch thick crust
  8. Wrap crust around the rolling pin and unwrap it into the baking pan.
  9. Shape the edges to about 1/2 inch higher than the rest of the surface.

  11. Mix the fruit filling with walnuts, lemon juice and lemon zest.
  12. Add your favorite spices, such as nutmeg, cardamom, cloves and vanilla.
  13. -
  14. Foll the filling out on a baking sheet and spread evenly over the crust.
  15. Remove the rest of the dough from the fridge.
  16. Using a very coarse shredder, shred the dough over the baking pan, taking care to spread it evenly all over the pie. The surface should be lacy, with some filling peeking out of it here and there.

  18. Bake for about 35-40 minutes in a 325F oven

  20. Let cool and cut into diamonds.
  21. Optionally, sift some confectioner sugar over before serving.
