Black Olives And Egg Sandwich

This is a very simple recipe for my favorite sandwich. It may sound odd but if you like canned black olives and basic egg salad sandwiches, you'll love this recipe. You can serve this on untoasted bread as well as toasted. Read more I make finger sandwiches out of this when we have company and they're always enjoyed by all. See less
Ingredients
- 1 small can of chopped black olives (4 ounces), drained! shopping list
- 4 hard-boiled eggs, cooled and chopped shopping list
- 2 finely chopped green scallions (add more if you like) shopping list
- 3 TB regular mayonnaise (I do not use sweetned Mayo.) shopping list
- salt and pepper to taste shopping list
- whole wheat bread, lightly toasted or bread of your choice shopping list
- lettuce leaves shopping list
How to make it
- Mix all of the ingredients together and spread over toasted bread.
- *Kids love this mixture with Ritz or Wheat Thin crackers. This mixture makes a wonderful dip! (And its really good on old fashioned corn rye bread!)
