Wild Rice Soup

- 6 tablespoons butter shopping list
- 1 tablespoon minced onion shopping list
- 1/2 cup flour shopping list
- 3 cups chicken broth - heated shopping list
- 2 cups wild rice, cooked shopping list
- 1/3 cup cooked ham, diced shopping list
- 1/2 cup carrots, finely shredded shopping list
- 3 tablespoons almond slivers, chopped shopping list
- 1/2 teaspoon salt shopping list
- 1 cup half-and-half shopping list
- 2 tablespoons dry sherry shopping list
- snipped parsley or chives (for garnish) shopping list
How to make it
- Make a basic rouxe, sauteeing onions in the melted butter
- Add flour, letting the mixture cook for 1-minute after bubbling.
- Slowly stir in the heated, home-made chicken broth.
- Bring to a low-boil, reduce heat and simmer for 5-minutes.
- Add remaining ingredients, stirring gently and serve.

Oh, this is a wonderful soup! Made it last night; even my 4-year-old liked it. It's easy and fast, too. I used real wild rice (that only takes 20 minutes to cook), black pepper, and a small pinch of white pepper. Warming, filling, lovely soup.
