15 Minute Scones Recipe

Started making these when I needed a quick breakfast treat. Now make them all the time when we go camping as I usually have all the ingredients on hand.

Ingredients
- 1 1/4 c. flour
- 1 1/4 tsp. baking powder
- 1/2 tsp. salt
- 2 tsp. sugar
- 2 tblsp. margarine or butter
- 1 egg
- 1/4 c. milk
- 1/4 c. raisins, craisins, chopped dried apricots, or chocolate chips (optional)
- sugar or cinnamon sugar
Directions
- Preheat oven to 450 degrees
- Grease an 8 in. round cake pan
- Mix the dry ingredients.
- Cut in the margarine.
- Beat the egg and milk and mix into the dry ingredients till dough holds.
- Add the fruit or chips if desired.
- Form into ball and knead 12 times.
- Place in pie pan and pat into 6 in. circle, 3/4 inch deep.
- Cut into 4 to 6 wedges, NOT all the way through.
- Sprinkle top with sugar or mixture of cinnamon/sugar
- Bake 8-10 minutes or till golden.
- Serve warm with extra butter, jam and tea or coffee
