Sharons Biscotti Recipe
Tried making biscotti and they never turned out till I tried this one from a friend. Have made tons for Christmas as gifts and everyone loves them.

Ingredients
  • 1/2 c. butter, room temperature
  • 1 c. sugar
  • 1 1/2 tsp. vanilla
  • 2 eggs
  • 2 c. flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 1/2 c. chopped nuts

Directions
  1. Combine butter, sugar, eggs and beat slightly leaving butter a little lumpy. Beat in vanilla just a little.
  2. Combine the dry ingredients and add to the egg mixture. (Batter will be very stiff and sticky)
  3. Put in bowl, cover with plastic wrap and refrigerate 2-3 hours or overnight.
  4. Grease 10x14 cooky sheet.
  5. Preheat oven to 400 degrees
  6. Divide dough in half and shape into 2 long loaves, rolling with hands till 12 inches long. They will be onlyabout 1 inch square.
  7. Place side by side on sheet leaving about 3 inches between.
  8. Flatten each slightly.
  9. Bake for 20 minutes or till firm. Remove from oven to rack and
  10. cool slightly. Lower oven temperature to 375 degrees.
  11. Slice loaves while still warm diagonally into 1/2 inch thick slices.
  12. Place on sheet and bake again at 375 for 15 minutes or till firm, try not to get them too browned.
  13. Cool and store in tins or airtight container.
  14. *Note* I sometimes replace the vanilla with other flavoring and also drizzle them with melted chocolate after they're cool.
