Two Onion Potato Waffles Recipe

Ingredients

1 1/2 cup lowfat buttermilk

1/2 cup unsalted butter, melted

2 eggs

3 tbl green onion, finely minced

2 tbl dried onions

1 1/2 cup flour

1/2 cup dried potato flakes

1 tbl baking powder

1/2 tsp baking soda

1 tsp kosher or sea salt

Directions

Preheat your waffle iron.

Combine buttermilk through dried onions.

Let stand 10 minutes.

In a separate bowl combine dry ingredients (flour through salt).

Add wet ingredients.

Mix with a fork. Do not over mix, the batter will be lumpy.

Spoon onto waffle iron.

Cook until golden brown.
