Two Onion Potato Waffles Recipe
Not your traditional waffles, crisp and oniony (is oniony a word?) Serve them with cream cheese. Make a great dinner side too!

Ingredients
  • 1 1/2 cup lowfat buttermilk
  • 1/2 cup unsalted butter, melted
  • 2 eggs
  • 3 tbl green onion, finely minced
  • 2 tbl dried onions
  • 1 1/2 cup flour
  • 1/2 cup dried potato flakes
  • 1 tbl baking powder
  • 1/2 tsp baking soda
  • 1 tsp kosher or sea salt

Directions
  1. Preheat your waffle iron.
  2. Combine buttermilk through dried onions.
  3. Let stand 10 minutes.
  4. In a separate bowl combine dry ingredients (flour through salt).
  5. Add wet ingredients.
  6. Mix with a fork. Do not over mix, the batter will be lumpy.
  7. Spoon onto waffle iron.
  8. Cook until golden brown.
