Cranberry Nut Bread

- 2 cups fresh cranberries shopping list
- 3/4 cup chapped pecans (or walnuts) shopping list
- 2 cups sifted flour (half can be whole wheat) shopping list
- 1 cup + 2 Tablespoons sugar shopping list
- 1 3/4 tsp baking powder shopping list
- 1 tsp salt shopping list
- 1/2 tsp baking soda shopping list
- 1 egg, well beaten shopping list
- 1/3 cup orange juice shopping list
- 1/4 cup water shopping list
- 2 Tablespoon melted butter shopping list
- 1 tsp. dried orange rind shopping list
How to make it
- Pre-heat oven to 350
- Sift dry ingredients together
- Make a well in the center of the dry ingredients and add the liquids all at once. I mix them in a glass measure, then pour in the semi-cooled butter.
- Stir only enough to moisten dry ingredients.
- Add nuts and cranberries and orange rind.
- Turn into 2 small loaf pans (4x9) lined with waxed paper
- Bake at 350 for 50 minutes or until a tester comes out clean.
- Cool 10 minutes in the pan before turning out on to a cake rack.
- Remove waxed paper and completely cool on the rack before wrapping in foil.
- Serve sliced with butter or cream cheese, or give loaf as a gift!

Definitely has a tart bite to it. Glad all that sugar is in it. Tastes great with a lot of butter. Mother had to use a packet of sweet and low to tame the tart.
Used frozen berries. Baked up nicely without defrosting them.
