How to make it

  • Pre-heat oven to 350
  • Sift dry ingredients together
  • Make a well in the center of the dry ingredients and add the liquids all at once. I mix them in a glass measure, then pour in the semi-cooled butter.
  • Stir only enough to moisten dry ingredients.
  • Add nuts and cranberries and orange rind.
  • Turn into 2 small loaf pans (4x9) lined with waxed paper
  • Bake at 350 for 50 minutes or until a tester comes out clean.
  • Cool 10 minutes in the pan before turning out on to a cake rack.
  • Remove waxed paper and completely cool on the rack before wrapping in foil.
  • Serve sliced with butter or cream cheese, or give loaf as a gift!

    Definitely has a tart bite to it. Glad all that sugar is in it. Tastes great with a lot of butter. Mother had to use a packet of sweet and low to tame the tart.
    Used frozen berries. Baked up nicely without defrosting them.
