I clipped this one out of the paper and made it a year ago this month. I wrote down the word "good" then crossed through it and wrote "excellent!" Let me know what you think!

Ingredients
  • Butter
  • 2 tablespoons (1/4 stick) butter
  • 6 ¾ inch-thick pork loin chops
  • salt and freshly ground pepper
  • 2 cups quartered mushrooms
  • 2 medium onions, chopped
  • ¼ lb. bacon, diced
  • 2 tablespoons flour
  • 1 ½ teaspoons paprika
  • 1 cup whipping cream
  • 1 cup beef broth (Swanson’s canned broth is good)
  • 2 tablespoons tomato sauce

Directions
  1. Preheat oven to 375°F.
  2. Butter a 9 x 16 inch glass baking dish.
  3. Melt 2 tablespoons butter in a heavy large skillet over high heat.
  4. Season chops with salt and pepper.
  5. Add to skillet (in batches, if necessary) and sear until brown, about 2 minutes per side.
  6. Transfer to prepared baking dish.
  7. Top with mushrooms.
  8. Add onions and bacon to the same skillet and cook over medium
  9. heat until onions are translucent and bacon is crisp, stirring
  10. frequently, about 10 minutes.
  11. Mix in flour and paprika.
  12. Increase heat to medium-high.
  13. Stir in cream and broth and bring to boil, stirring constantly.
  14. Mix in tomato sauce.
  15. Season with salt and pepper.
  16. Pour sauce over mushrooms and chops.
  17. Transfer to oven and bake until chops are tender, approximately 20 to 25 minutes.
  18. Serve with rice.

I made this last night, all I can say is yummmmm!!
