Baked Tomatoes And Artichokes Recipe
This makes a very good side dish with many things. Full of flavor, last time I made it I served it with a nice piece of steak. Made the meal come alive.

Ingredients
  • 1 (14 ounce) can Italian plum tomatoes (undrained)
  • 4 ounces tomato sauce
  • 1 (14 ounce) can artichoke hearts, drained and quartered
  • 1/2 cup onions, finely chopped
  • 2 tbsp butter
  • 2 tbsp flour
  • 1/2 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp dried oregano
  • 1/8 tsp dried thyme
  • 1/4 tsp black pepper
  • 2/3 cup Parmesan cheese, freshly grated

Directions
  1. Preheat oven to 400 degrees.
  2. Butter shallow baking dish.
  3. Melt butter in heavy large saucepan over low heat.
  4. Add flour, mustard, salt, oregano, thyme, and pepper and stir for 1 minute.
  5. Add tomatoes, sauce, artichokes, and onion and stir to combine thoroughly.
  6. Pour into prepared baking dish.
  7. Sprinkle with Parmesan cheese.
  8. Bake until bubbling and top is golden brown, about 30 minutes. Serve hot.
