Grilled Corn And Black Beans Salad Recipe
A versatile and colorful salad that can be served over chips or with chicken, salmon or steak. Very easy to make. 2001 Cooking Light

Ingredients
  • 3 ears shucked Corn
  • 1/2 C fresh Lime juice (about 2 Limes)
  • 1/3 C minced Red Onion
  • 1/3 minced fresh Cilantro (I leave this out)
  • 3 Tbl. White Vinegar
  • 2 tsp. Sugar
  • 2 tsp. ground Cumin
  • 2 tsp. Chili Powder
  • 1 (15-ounce) can Black Beans, drained
  • Lime wedges (optional)

Directions
  1. Prepare grill.
  2. Place corn on a grill rack; grill 20 minutes or until corn is lightly browned, turning every 5 minutes. Cool. Cut kernels from corn; place in a bowl.
  3. Add juice and remaining ingredients; stir gently. Cover and chill 1 hour.
  4. Garnish with lime wedges, if desired.
