Quinoa Salad Recipe
An ancient grain cultivated by the Aztecs, quinoa makes a nutritious foundation for this light and tasty salad.

Ingredients
  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1/2 cup finely diced English cucumber
  • 4 stems finely diced green onion
  • 1/4 cup finely diced fresh cilantro
  • 1/3 cup corn kernels
  • 3 tbsp fresh lime juice
  • 3 tbsp sesame oil
  • 1 tbsp toasted sesame oil
  • salt & pepper to taste
  • 1 tsp rice syrup or honey (optional)

Directions
  1. Bring water to a boil in a pot, then add quinoa.
  2. Reduce heat and simmer covered for 15 minutes, stirring occasionally until grain is tender.
  3. Remove from heat and let cool uncovered.
  4. Toss the cucumber, onion, cilantro and corn with the cooked quinoa.
  5. Combine the lime juice, sesame oil, salt, pepper and honey in a bowl.
  6. Add dressing to the quinoa.
  7. Stir thoroughly with a fork to coat grain and vegetables.

I have just tried quinoa for the first time, in a salad with beans and baby tomatoes - I'll submit the recipe next time I make it, because it was good! Your version with the cucumbers and corn sounds yummy. Thanks for the post.
