Swiss Chicken Cutlets Recipe
This is great with steamed rice or mashed potatoes.

Ingredients
  • 2 thin slices swiss cheese
  • 4 bonless skinless chicken breasts
  • 4 Tbsp flour
  • Salt
  • Pepper
  • 1 Tbsp butter
  • 1 cup chicken broth
  • 1/2 cup dry white wine
  • 1/2 tsp oregano

Directions
  1. Melt butter in skillet. Salt & pepper chicken to taste and dredge in flour.
  2. Cook chicken in butter browning on both sides.
  3. Add broth, wine and oregano to skillet.
  4. Increase heat and bring to boil. Reduce heat & simmer until chicken is cooked thoroughly and sauce is slightly thickened, about 10 to 12 minutes.
  5. Cut cheese in half and place on each chicken breast, cover until cheese is melted and serve.

The boyfriend loves swiss...I am going to try this but I have a question...Can olive oil be used? Or does it have to be butter? (I am a huge olive oil fan)


Anything with swiss is great - I have a wheat allergy and know that rice flour will work great with this recipe - thanks!
