An excellent, nutrient-packed whole food breakfast for those on the go. Perfect with either soy or regular milk, and substitute rice bran for the oat bran if you can't eat wheat! Created for my healthy cooking seminar.

I'm allergic to soy and strawberries - so I use rice milk and bananas along with blueberries in my morning smoothie. I also throw in a couple of tablespoons of flax-seed oil, or ground flax seed - and, I throw in a cup or so of mixed salad greens or parsley - an easy way of getting a good dose of greens! Green powder is good too - spirulina/blue-green algae....yum...

I thought this was so good and satisfying. My boyfriend turns his nose up at tofu, but that's o.k more for me!

Perfect breakfast for me. I need to start my day with something like this. I think I'll try adding the parsley to.
