Asparagus With Tomatoes And Shallots Recipe
A simple and easy recipe that is absolutely delicious. It takes more time to prep than cook. :)

Ingredients
  • 2 TB butter
  • 1 pound asparagus, trimmed and cut into pieces
  • 1 shallot, minced
  • 2 c. ripe tomatoes, peeled and chopped
  • 1 TB parsley, chopped
  • 1 tsp. lemon juice

Directions
  1. In a heavy skillet, melt butter over medium heat. Saute asparagus for 2 minutes. Stir in shallot, tomatoes, parsley and lemon juice. Cover and simmer 3 to 4 minutes until asparagus is tender.
