Asparagus With Tomatoes And Shallots

- 2 TB butter shopping list
- 1 pound asparagus, trimmed and cut into pieces shopping list
- 1 shallot, minced shopping list
- 2 c. ripe tomatoes, peeled and chopped shopping list
- 1 TB parsley, chopped shopping list
- 1 tsp. lemon juice shopping list
How to make it
- In a heavy skillet, melt butter over medium heat. Saute asparagus for 2 minutes. Stir in shallot, tomatoes, parsley and lemon juice. Cover and simmer 3 to 4 minutes until asparagus is tender.
