Company Seafood Pasta

- 2 large shallots, peeled and diced shopping list
- 2 tablespoons butter shopping list
- 2 tablespoons all-purpose flour shopping list
- 2 cups sour cream shopping list
- 3 cups monterey jack cheese, shredded shopping list
- 8 ounces imitation crab, chopped or 2 cans crabmeat, drained shopping list
- 1/8 teaspoon ground black pepper shopping list
- 1 pound bay scallops shopping list
- 1 pound medium cooked shrimp, peeled and deveined shopping list
- 1 pound angel hair pasta, cooked and drained shopping list
- fresh parsley, minced shopping list
How to make it
- In a large saucepan, melt butter. Add shallots and saute until softened.
- Meanwhile, whisk together flour and sour cream.
- Add to saucepan with cheese. Cook over medium heat, stirring, utnl bubbly. Cook 2 minutes, stirring.
- Remove from heat and stir in crab and ground black pepper. Keep warm.
- In a small saucepan, poach scallops in a small amount of water or white wine for 5 to 7 minutes or just until opaque.
- Drain and add to crab mixture.
- Stir in cooked shirmp and cook over low heat until heated through.
- Arrange pasta on large serving platter.
- Top with seafood mixture.
- Sprinkle with minced parsley.
