Pepper Crab Soup

- 1 C ea. diced red and green peppers shopping list
- 1C diced onions shopping list
- 6 oz butter shopping list
- 1 c flour shopping list
- 2 lbs lump crab meat, cleaned shopping list
- 1qt heavy cream shopping list
- 3 qts. seafood stock shopping list
- 1 tblsp cayenne pepper shopping list
- 1 tblsp white pepper shopping list
- 2 tblsp paprika shopping list
- 4 oz. tomato sauce shopping list
How to make it
- Saute Peppers and onions in 2oz of butter until soft
- add cream and stock to a large stock pot
- add onions,peppers cayenne, white pepper and paprika
- stir
- add tomato sauce cook over med. heat stirring often as not to scorch
- add crab meat
- when just to the boinling point melt remaing butter in a pan and add flout to make a roux cook until lightly golden and nutty tasting
- add with whisk to soup
- whisking briskly to remove any lumps until soup has thickened turn heat to low and cook for 30 minutes stirring occasionally
