Carmelized Vidalia Onion Pasta W Rosemary And Walnuts Recipe
This unique pasta dish is sure worth the wait for Vidailia onions to come in. I originally got the idea for this recipe from Deborah Madison's Vegetarian Cooking for Everyone.

Ingredients
  • 4T. butter
  • 3lbs. sweet onions
  • 4 thyme sprigs
  • 1c. dry white wine
  • 1/4c. balsamic vinegar
  • crushed red pepper
  • 2t. chopped fresh rosemary
  • 1/2c. chopped walnuts
  • 1c. shredded Pecorino
  • 3 cloves garlic chopped
  • salt and pepper to taste

Directions
  1. In a wide deep pan melt the butter on medium heat
  2. Add onions,garlic, thyme, rosemary,1t. salt, pepper, red pepper, stir and cover with lid for about 5-10 min.
  3. Turn the heat to low and add wine, vinegar and give them a stir.
  4. Every 20 mins. stir.
  5. When they have turned golden and thick turn off the heat .
  6. Srir in the walnuts.
  7. Mix with cooked angel hair pasta and sprinkle with cheese.
  8. Serves 4
  9. I always start with about 7 or 8 lbs. of sweet onions because my family is large.
  10. If you just use this basic idea the portions you cook are very easily tweaked.
  11. Well worth the wait!
