Sunshine Chicken Recipe
this is a fantastic low carb meal (each serving is only 1 carb) . It has a great tart/sweet flavor, and looks beautiful to serve guests.

Ingredients
  • 1 package (3 oz.) sugarfree lemon-flavored gelatin
  • 4 T butter, melted
  • 2 T prepared mustard
  • 1 tsp garlic salt
  • 4 large boneless skinless breasts halves
  • 3 T thinly sliced almonds

Directions
  1. Preheat oven to 350°.
  2. In a small bowl combine gelatin, melted butter, mustard, garlic, salt and pepper.
  3. Brush over both sides of the chicken breasts and place in an ungreased baking dish.
  4. Sprinkle almonds on top of chicken.
  5. Cover and bake at 350° for 20 to 25 minutes, basting once.
  6. Bake uncovered for 15 minutes longer or until done.
