Oatmeal Honey Bread Recipe

Ingredients
  • 1-1/2 cups water
  • 1/2 cup clover honey
  • 1/3 cup butter
  • 5-1/2 to 6-1/2 cups unbleached flour
  • 1 cup quick cooking oats
  • 2 tsp. sea salt
  • 2 packages instant yeast
  • 2 eggs, lightly whisked
  • Egg Wash:
  • 1 egg white
  • 1 Tbsp. water
  • 1 Tbsp. oatmeal

Directions
  1. Combine water, honey and butter in a small saucepan.
  2. Heat over low heat until the mixture is very warm (hot enough to put your hand on the pot without burning).
  3. Place 5 cups of flour, salt and yeast in the mixer bowl.
  4. Attach spiral dough hook and mix on speed 2 for about 30 seconds.
  5. Continue on speed 2 and gradually add the warm honey mixture to the flour mixture and mix for approximately 1 minute.
  6. Add the eggs mixing for about another minute.
  7. Continue on speed 2 adding just enough flour - 1/2 cup at a time until the dough cleans or pulls away from the sides.
  8. Knead on speed 2 for 2 minutes.
  9. Remove the dough hook.
  10. Cover the mixer bowl with plastic wrap.
  11. Let rise in a warm place until dough doubles.
  12. Punch down the down and divided into half.
  13. Shape into smooth rounds, buns or loaves.
  14. Cover with plastic wrap.
  15. Let rise until doubled.
  16. Beat egg white and water together.
  17. Brush tops of loaves.
  18. Sprinkle with oatmeal.
  19. Bake at 375ºF for 30 to 40 minutes or until lightly browned and when tapped sounds hollow.
  20. Makes 2 loaves
