How to make it

  • 1. Preheat oven to 325°F (160°C). Line a muffin tin with paper baking cups.
  • 2. Divide vanilla wafers, placing one in the bottom of each cup. In a medium mixing bowl, beat together cream cheese, sugar, egg, lemon juice, lemon peel and vanilla until light and fluffy.
  • Fill paper cups two-thirds full.
  • 3. Bake for 15 to 20 minutes or until cheesecake is just set.
  • Makes 12 miniature cheesecakes.

    This recipe looks perfect for a get together I am having this week. I can't get vanilla wafers here but will substitute a different type of cookie and will add cherry pie filling on the top after it is done baking. I'll let you know how it turns out.
