Mini Lemon Cheesecakes

- 12 vanilla wafers shopping list
- 1 (8-ounce) package cream cheese shopping list
- 1/3 cup granulated sugar shopping list
- 1 large egg shopping list
- 2 teaspoons lemon juice shopping list
- 1 teaspoon grated lemon peel shopping list
- 1/2 teaspoon vanilla extract shopping list
How to make it
- 1. Preheat oven to 325°F (160°C). Line a muffin tin with paper baking cups.
- 2. Divide vanilla wafers, placing one in the bottom of each cup. In a medium mixing bowl, beat together cream cheese, sugar, egg, lemon juice, lemon peel and vanilla until light and fluffy.
- Fill paper cups two-thirds full.
- 3. Bake for 15 to 20 minutes or until cheesecake is just set.
- Makes 12 miniature cheesecakes.
