Chicken And Herb Fritters Recipe
These are simple and fun to make using left-over mashed potatoes, cooked chicken and ham. They make a nice light lunch served with a light salad and tomatoes or with a chili sauce dip. From, Classic Chicken Recipes.

Ingredients
  • 1 pound Mashed Potato, with butter added
  • 1 1/3 C finely chopped cooked Chicken
  • 2/3 C finely chopped cooked Ham
  • 1 Tbl. Mixed Herbs of your choice (i.e., fresh tarragon and parsely.) You can experiment.
  • 2 Eggs, lightly beaten
  • Milk
  • 2 C fresh Brown Bread Crumbs
  • Oil for shallow frying
  • Salt and Pepper

Directions
  1. In a large bowl, blend the potatoes, chicken, ham, herbs, and 1 egg, and season with salt and pepper.
  2. Shape the mixture into small balls or flat patties.
  3. Add a little milk to the second egg.
  4. Place the bread crumbs on a plate. Dip the patties in the egg and milk mixture, then roll in the bread crumbs to coat completely.
  5. Heat the cooking oil in a large skillet on medium and fry fritters, turning frequently until golden brown all over.
