Chicken And Herb Fritters

- 1 pound Mashed potato, with butter added shopping list
- 1 1/3 C finely chopped cooked chicken shopping list
- 2/3 C finely chopped cooked ham shopping list
- 1 Tbl. mixed herbs of your choice (i.e., fresh tarragon and parsely.) You can experiment. shopping list
- 2 eggs, lightly beaten shopping list
- milk shopping list
- 2 C fresh brown bread Crumbs shopping list
- oil for shallow frying shopping list
- salt and pepper shopping list
How to make it
- In a large bowl, blend the potatoes, chicken, ham, herbs, and 1 egg, and season with salt and pepper.
- Shape the mixture into small balls or flat patties.
- Add a little milk to the second egg.
- Place the bread crumbs on a plate. Dip the patties in the egg and milk mixture, then roll in the bread crumbs to coat completely.
- Heat the cooking oil in a large skillet on medium and fry fritters, turning frequently until golden brown all over.
