Ingredients

How to make it

  • Preheat oven to broil setting
  • Defrost tilapia fillets if they're frozen
  • Spray pan with non-stick spray
  • Lay tilapia fillets down on pan and pour lime juice over them, or sprinkle them with TrueLime*
  • Sprinkle fillets with sea salt, cracked pepper, Cajun seasoning (to taste)
  • Spray the fillets with the butter spray
  • Broil in oven for 6-7 minutes
  • While the tilapia is broiling, sautee your diced tomatoes, black beans, fiesta corn and chopped onions in a pan. You may want to add some more salt, pepper or buttery spray to them as they sautee.
  • When tilapia is ready, remove from oven.
  • Spoon your medley of vegetables onto a plate.
  • Put tilapia on top of the vegetables.
  • Enjoy!
  • NOTE: *TrueLime is a crystallized lime juice. I use it most of the time in this recipe because of how quickly produce goes bad & I tend to make this dish on a whim. For the purists out there, I just wanted to say it's 100% pure, natural lime juice/oils that have been crystallized. Nothing else. I like it because it is all natural, contains no artificial flavors or sweeteners, no preservatives or sodium, has 0 calories, contains Vitamin C, & is easy to use, especially when you're out of fresh limes! One packet = 1 wedge of lime.

    I make something similar but am eager to try your recipe. I marinate the tilapia overnight in a lime cilantro mixture and then while its broiling I saute red, yellow and orange peppers, onion, garlic and one minced habanero...

    I will make this tomorrow! Fish on Fridays! I don't know if I have any corn, but I will throw in some roasted red bell pepper and serve this w/ a whole wheat tortilla. Yum - Thanks!
