Ingredients

4-cups peeled and diced apples (a combination of tart and sweet varieties works well.)

2 cups sugar

1/2 salad oil

1 cup chopped walnuts or pecans

2 eggs, well beaten

2 teaspoons vanilla

2 cups general purpose flour

2 teaspoons baking soda

2 teaspoons cinnamon

t teaspoon salt

Directions

Heat oven to 350 degrees.

Mix apples and sugar thoroughly in large mixing bowl.

Add oil, nuts, eggs, and vanilla.

In medium bowl mix dry ingredients together and add to apple mixture.

Bake in greased 13x9 inch pan for 1 hour. (Cake should pull away slightly from edges of pan and still be soft in the middle.)

One of our favorite cakes - so good warm and topped with ice cream or whipped cream! My recipe only makes an 8x8, which is nice for when it's just for a couple people, but I will have to try your recipe when I want MORE (or leftovers!!). Thanks~
