Apple Cake Recipe

This is a very easy, but tasty cake. Very good with sour cream frosting or ice cream or just as is!

Ingredients
- 4-cups peeled and diced apples (a combination of tart and sweet varieties works well.)
- 2 cups sugar
- 1/2 salad oil
- 1 cup chopped walnuts or pecans
- 2 eggs, well beaten
- 2 teaspoons vanilla
- 2 cups general purpose flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- t teaspoon salt
Directions
- Heat oven to 350 degrees.
- Mix apples and sugar thoroughly in large mixing bowl.
- Add oil, nuts, eggs, and vanilla.
- In medium bowl mix dry ingredients together and add to apple mixture.
- Bake in greased 13x9 inch pan for 1 hour. (Cake should pull away slightly from edges of pan and still be soft in the middle.)

One of our favorite cakes - so good warm and topped with ice cream or whipped cream! My recipe only makes an 8x8, which is nice for when it's just for a couple people, but I will have to try your recipe when I want MORE (or leftovers!!). Thanks~
