Five Spice Oxtail Soup

- 4 pounds oxtails shopping list
- 2 pounds beef or pork bones shopping list
- 1 onions cut in 4 shopping list
- 6 cloves garlic crushed shopping list
- 1 or 2 celery stalks 1/2 inch long shopping list
- 4 cilantro roots shopping list
- 4 star anise or 4 tablespoon five spice shopping list
- salt and pepper to taste shopping list
- 2 sliced of galagal fresh or dry shopping list
- 2 lemongrass cut 1/2 inch long shopping list
- 1/2 cup of cilantro leaves chopped for topping shopping list
- 5 tbsp.or more thick soy sauce for darkess shopping list
- 2 parley leaves discard steam shopping list
- 4 tablespoon olive oil shopping list
- 1/2 red onion thinly sliced shopping list
- 3 glove of fried garlic in oil (optional) shopping list
- 8 cups of cook jasmine rice shopping list
- 8 sliced of lime (optional) shopping list
- SIDE CONDIMENTS : (if desire) shopping list
- sliced hot pepper in vinegar shopping list
- sugar shopping list
- hot dried red pepper blended shopping list
- fish sauce shopping list
How to make it
- In a large pot, add 2 tablespoons of olive oil, add cilantro root, half amount of garlic, celery and onion.
- When vegetables begin to take on color, add 2 pounds of beef or pork bones. Stir til brown
- After the bone take on sufficiently roasted color. Add water to cover bone, galagal, lemongrass, star anise, thick soy sauce, salt and pepper.
- Simmer on the lowest heat for 1 hour. Keep check it to make sure that is not too dry. If dry add more water.
- When done, drained beef bone and all herbs from soup and bring back the broth and continue cooking.
- In a medium size pan, add garlic, cook until golden brown, add oxtail, cook until brown. Place oxtails into the broth and bring to boil. When boil, cover and simmer in a low hear for 2-3 hours.
- In a serving bowl, placed a scoop of Jasmine rice into bowl. Pour in oxtails and broth, top with cilantro, parsley, red onion, fried garlic and side of lime wedges if desire. (some people like lime juice in there's soup)
- Thai side condiments can be use in this dish if desire...
- Rice can be eated seperate if desire......ENJOY
