How to make it

  • Toast cumin seeds in a heavy skillet over medium heat until golden brown.
  • Stir occasionally and watch carefully because they burn easily then set aside.
  • Combine onions and garlic in a large covered skillet or saucepan over low heat.
  • Cook stirring occasionally until tender about 20 minutes.
  • Add a little water or stock if necessary to prevent scorching.
  • Add remaining ingredients except tortillas and salsa and cumin seed and cook 20 minutes.
  • To serve spoon 1/3 cup taco filling onto each soft warm tortilla and fold in half.
  • Garnish with salsa as desired.
