Soft Chicken Tacos

- 1 tablespoon whole cumin seed shopping list
- 2 medium white onions coarsely chopped shopping list
- 3 garlic cloves finely minced shopping list
- 1 pound boneless skinless chicken breast cubed shopping list
- 2 large fresh tomatoes coarsely chopped shopping list
- 2 roasted jalapeño peppers seeded deveined and finely chopped shopping list
- 7 ounce can chopped green chilies shopping list
- 1 teaspoon salt shopping list
- 18 corn tortillas warmed shopping list
- salsa for garnish shopping list
How to make it
- Toast cumin seeds in a heavy skillet over medium heat until golden brown.
- Stir occasionally and watch carefully because they burn easily then set aside.
- Combine onions and garlic in a large covered skillet or saucepan over low heat.
- Cook stirring occasionally until tender about 20 minutes.
- Add a little water or stock if necessary to prevent scorching.
- Add remaining ingredients except tortillas and salsa and cumin seed and cook 20 minutes.
- To serve spoon 1/3 cup taco filling onto each soft warm tortilla and fold in half.
- Garnish with salsa as desired.
