Italian Sausage With Vegetable Roast

- 1 lb. sweet Italian pork sausage, cut into 1/2" pieces shopping list
- 1 medium red pepper, cut into 1" strips shopping list
- 2 fennel bulbs, cut into wedges shopping list
- 6 medium Italian plum tomatoes, cut into wedges shopping list
- 2 tsp. dried oregano leaves, crushed shopping list
- 1 1/2 cups Swanson® chicken broth OR cup Swanson® Natural Goodness™ chicken broth shopping list
- 4 cups hot cooked creamy polenta * shopping list
How to make it
- PREHEAT oven to 425°F. Spray roasting pan with vegetable cooking spray.
- MIX sausage, pepper, fennel, tomatoes, oregano and 1/2 cup broth in pan.
- ROAST 30 min. or until done, stirring once.
- STIR in remaining broth. Serve with pan juices over polenta. Garnish with freshly grated Parmesan cheese, if desired.
- TIP: *For extra flavor, cook cornmeal in broth instead of water.

Mmmm....I caught this recipe briefly this morn, but was on my way out the door -- to the dentist!! I've been looking for it ever since I got back home -- which isn't easy when you're not allowed to eat for 12 hours!!LOL!!
