Light Red Beans And Rice Recipe
I found this recipe in a local paper in 1999. It's a hearty cold weather meal without the added fat of using ham hocks.

Ingredients
  • 2 C chopped Onions
  • 2 C chopped Celery
  • 2 C chopped Green Peppers
  • 2 cloves Garlic, minced
  • 4 Tbl. Oil
  • 3 Tbl. Flour
  • 3/4 pound Ham, in 1/4-inch cubes
  • 2 Bay Leaves
  • 1 tsp. Black Pepper
  • 2 tsp. Thyme
  • 1 tsp. Oregano
  • 1 tsp. (or to taste) Cayenne Pepper (or a splash of hot sauce)
  • 4 C fat-free Chicken Broth
  • 1 C Water
  • 2 large cans (40 1/2 oz. each) Dark Red Kidney Beans
  • 6 C hot, cooked Brown Rice (I like to use steamed White Rice)

Directions
  1. Chop Onions, celery and green peppers to medium dice in a food processor.
  2. Combine in a bowl with garlic.
  3. Heat oil in a large, deep kettle.
  4. Add vegetables and cook and stir for 3 minutes.
  5. Cover and cook over low heat for 15 minutes, stirring occasionally, until very soft.
  6. Add flour and ham to vegetables and increase heat to medium.
  7. Cook and stir for five minutes.
  8. Add seasonings and stir well.
  9. Slowly stir in chicken broth and water. Simmer uncovered for 10 minutes.
  10. Add kidney beans and simmer for 20 minutes.
  11. Serve in bowls over hot rice.

This recipe is so delicious it has all of the elements I like in a bean and rice dish. That cayenne pepper adds enough heat to the dish to jazz it up.
