Meal - Sized Vegan Caesar Salad

- 5 oz light silken tofu (Mori-Nu, etc) shopping list
- 1/4 tsp. maple syrup (optional) shopping list
- 2 Tbs. nutritional yeast shopping list
- 1 Tbs. fresh lemon juice shopping list
- 1/2 tsp lemon zest shopping list
- 1 Tbs. apple cider vinegar shopping list
- 1 tbsp. Dijon mustard shopping list
- 3 cloves garlic, minced shopping list
- 1 tsp. coarse-ground black pepper shopping list
- 1/2 tsp kosher salt shopping list
- 1 large head romaine lettuce, washed, dried and chopped shopping list
How to make it
- Place tofu, syrup, nutritional yeast, lemon juice, lemon zest, vinegar, mustard, and garlic in blender or food processor, and process. Season generously with pepper and salt.
- To assemble salad, place lettuce in salad bowl, and pour dressing overtop. Toss well to coat leaves evenly.
