This is what I served last night for part of our Easter dinner. Not only is it extremely easy but the garlic really enhances the flavor of the lamb.

Ingredients
  • 2 pound leg of lamb
  • 3 cloves of garlic cut into slivers

Directions
  1. Remove the leg of lamb from the refrigerator about 1 hour before cooking.
  2. Preheat the oven to 325 degrees.
  3. Remove the skins from the 3 cloves of garlic and cut into slivers.
  4. Insert the slivers of garlic under the skin of the lamb leg using a pointed knife.
  5. Place the meat, fat side up, on a rack in an uncovered greased pan.
  6. Roast the meat 30 minutes to the pound or until the internal temperature reaches 175 - 180 degrees for meat well done.
  7. Serve the roast with deglazed drippings or mint sauce.

Debra...Im afraid to tackle Lamb... We dont see lamb alot in the south but I know if you made it it was good....Hope your Easter was good!!!

Debra, I love lamb! I grew up with it as we raised sheep. This is exactly how we make ours, except I like to put rosemary on mine.


I can vouch for this Lamb being good. It was very moist and tender. Great dish - good cook. lol
