Hot Antipasto Subs

- 1/4 cup creamy Italian dressing shopping list
- 2 TBSP. grated parmesan cheese shopping list
- 1 cup cherry tomatoes, cut into 1/4s shopping list
- 1 can (14 oz.) artichoke hearts, drained and cut into 1/4s shopping list
- 2 pieces roasted red peppers, from a jar, drained, sliced shopping list
- optional: marinated mushrooms, sliced shopping list
- 1 pkg. ( 5 oz.) sliced pepperoni, cut up*** shopping list
- 1 can (2 1/2 oz.) sliced ripe olives, drained shopping list
- 2 hoagie or 2 poor boy buns or 4 hot dog buns, split shopping list
- 1/2 cup shredded mozzarella cheese (2 oz.) shopping list
- **** meatballs or hot or sweet sausage is good also shopping list
How to make it
- Mix dressing and parmesan cheese in a large bowl.
- add tomatoes, artichoke hearts, pepperoni, and olives. toss
- turn oven on Broil
- place buns, cut side up, on a cookie sheet
- broil about 6 inches from heat for 5 minutes or until golden
- spoon pepperoni mixture onto buns
- sprinkle about 2 TBSP. mozzarella cheese over each
- Broil 3 to 4 minutes or until cheese is bubbly.
