By far the easiest and tastiest macaroons I have ever encountered. Always a hit at parties.

Ingredients
  • 2 egg whites
  • 1/3 cup of sugar
  • 2 tablespoons all-purpose flour
  • dash salt
  • 1/4 teaspoon almond extract
  • 2 cups coconut

Directions
  1. Preheat your oven to 325 degrees.
  2. Grease and lightly flour a cookie sheet.
  3. Using a fork, beat egg whites in a bowl, until frothy.
  4. Add sugar, flour, salt and almond extract. Blend well.
  5. Stir in coconut.
  6. Drop dough by tablespoonfuls, 2 inches apart onto greased cookie sheet.
  7. Bake for 13 to 17 minutes or until set and light, golden brown.
  8. IMMEDIATELY remove them from the cookie sheet.
