Fish For Martini Lovers Recipe

Ingredients
  • filets of whiting, sole, brill,
  • salt and pepper to taste
  • 75 gr butter (approx.)
  • fresh white bread crumbs
  • 2 shallots or small white onions, peeled and chopped
  • 1 to 2 teasp. parsley
  • 6 TBSP (or so..) dry vermouth

Directions
  1. preheat oven to about 200 ° CENTIGRADE
  2. mix parsley and onion,
  3. put into bottom of greased baking dish
  4. salt and pepper fish
  5. melt about half of the butter
  6. put fish in melted butter, turning to coat evenly
  7. then coat with bread crumbs
  8. put in baking dish on top of onion and parsley
  9. carefully pour Vermouth into dish NOT ON TOP OF FISH
  10. melt remaining butter, dribbling (??) it over fish
  11. bake fish for about 10 to 15 minutes, depending on thickness of filets
  12. remove fish carefully with one or two spatulas onto heated serving dish
  13. pour liquid remaining in baking dish into small pot,
  14. cook on stove-top to reduce liquid,
  15. pour over fish
  16. this goes well with small boiled potatoes

Very yummy fish dish. I think vermouth is made just for this kind of preparation. Wonderful flavors and buttery too.
