How to make it

  • preheat oven to about 200 ° CENTIGRADE
  • mix parsley and onion,
  • put into bottom of greased baking dish
  • salt and pepper fish
  • melt about half of the butter
  • put fish in melted butter, turning to coat evenly
  • then coat with bread crumbs
  • put in baking dish on top of onion and parsley
  • carefully pour Vermouth into dish NOT ON TOP OF FISH
  • melt remaining butter, dribbling (??) it over fish
  • bake fish for about 10 to 15 minutes, depending on thickness of filets
  • remove fish carefully with one or two spatulas onto heated serving dish
  • pour liquid remaining in baking dish into small pot,
  • cook on stove-top to reduce liquid,
  • pour over fish
  • this goes well with small boiled potatoes
