Fish for Martini lovers

- filets of whiting, sole, brill, shopping list
- salt and pepper to taste shopping list
- 75 gr butter (approx.) shopping list
- fresh white bread crumbs shopping list
- 2 shallots or small white onions, peeled and chopped shopping list
- 1 to 2 teasp. parsley shopping list
- 6 TBSP (or so..) dry vermouth shopping list
How to make it
- preheat oven to about 200 ° CENTIGRADE
- mix parsley and onion,
- put into bottom of greased baking dish
- salt and pepper fish
- melt about half of the butter
- put fish in melted butter, turning to coat evenly
- then coat with bread crumbs
- put in baking dish on top of onion and parsley
- carefully pour Vermouth into dish NOT ON TOP OF FISH
- melt remaining butter, dribbling (??) it over fish
- bake fish for about 10 to 15 minutes, depending on thickness of filets
- remove fish carefully with one or two spatulas onto heated serving dish
- pour liquid remaining in baking dish into small pot,
- cook on stove-top to reduce liquid,
- pour over fish
- this goes well with small boiled potatoes

Very yummy fish dish. I think vermouth is made just for this kind of preparation. Wonderful flavors and buttery too.
